In this anniversary class, we delve deep into the mysteries of just what exactly makes a chocolate bar taste like it does. We'll give you tools to help isolate flavour components and teach you some useful vocabulary that will have you tasting like an expert in just a little over an hour.
When: Saturday, March 30 at 5pm
This is your chance to taste ten new bars that we are particularly excited about. Improve your palate and expand your chocolate hgorizons as we lead you through a technical, sit-down tasting.

We have partnered with “El Cacaotal”, a chocolate library and bean-to-bar store in Lima, Peru, to bring you an exclusive look at the top small-scale cult chocolate crafters in that country. We will taste an extensive range of bars, none of which have ever been available in North America. There will be a small number of bars available for purchase after the tasting.
We are closing out the year with two quick introductory classes for those who want to learn what the world of bean-to-bar chocolate is all about. Come and taste some fantastic bars and improve your chocolate knowledge. Bring a friend!
David is in Seattle Nov 10th and 11th for the Northwest Chocolate Festival and will be bringing back a host of new bars with him. At this special class we’ll sit down and taste through a bunch of them plus learn what’s happening if the chocolate world at the moment. If you can’t get to Seattle (and you really should!) this will be the next best thing.
Master Level Chocolate Class
For those who want to take their knowledge and appreciation of chocolate to a new level. A sit down class with David Mincey where you will get to taste some of the finest bars ever made. Lots of discussion and education about the entire chocolate making process as well a chance to ask anything you've ever wanted to know about chocolate.
Cult Chocolate 101
Here we will be offering you an in depth look at the three very small bean-to-bar makers featrured this month. We'll try a range of bars from Coconama, Fresco and Qantu and give you a chance to discuss, compare and purchase all of them before the general public does.
Join us on a guided tasting and introduction to the world of artisanal chocolate. We will taste nine different dark chocolates from three different origins.

What is a mystery tasting? We have four different origins of chocolate from four chocolate makers. You get to taste the chocolate without the distraction of pretty wrappings or fun descriptions. Instead, focus on what you are tasting.
We have a special treat on Saturday- a fresh, Hawaiian-grown cacao pod! Come by and learn how cacao pods look, smell, and feel.
Join David Mincey, founder of The Chocolate Project, for a very special blind tasting of some of the worlds finest chocolate bars. On this evening we will replicate the judging at the International Chocolate Awards using the actual score sheets that professional tasters use. David will guide you through the process of analyzing and evaluating chocolate. This will be a fun and educational evening guaranteed to make you a better chocolate taster.
